CHICKEN JALFREZI

 

Ingredients:

Chicken breast

1 onion peeled and diced

 

4 tablespoons oil

2 fresh green chillies cut in half longways, deseeded & finely sliced

 

½ teaspoon turmeric

½ green bell pepper seeds removed & cut into 1.5cm squares

 

1 teaspoon cumin seeds

½ red bell pepper seeds removed & cut into 1.5cm squares

 

1 teaspoon white mustard seeds

Fresh coriander leaves - chopped

 

5 cms garlic paste

3 fresh tomatoes - chopped

 

1 tablespoon lazy ginger

2 teaspoons Garam Masala

 

1 teaspoon ground cumin      )

Lemon juice

 

1 teaspoon ground coriander  )

 

 

½ teaspoon chilli powder      ) Spices

 

 

½ teaspoon turmeric           )

 

 

¼ teaspoon salt                )

 

 

What you do:

1.      Prepare all the ingredients as above before you begin to cook.

2.    Cut the chicken into bite sized pieces. Wash your hands and the chopping board and knife.

3.    Heat the oil in the pan and then add the first turmeric and seeds. Stir into the oil.

4.    Add the garlic paste and lazy ginger and spices. Stir well and cook for one minute.

5.    Add the chicken and stir fry for about 5 minutes.

6.    Add the onion, sliced chillies and red and green peppers. Continue cooking for about 5 minutes.

7.    Add the tomatoes and Garam Masala. Cook for another 5 minutes. If the mixture looks dry or is beginning to stick to the bottom of the pan add a couple of tablespoons of water.

8.    Test the chicken to see if it is cooked. (Cut a piece in half. It should be white all the way through). When it is cooked stir in the coriander leaves and lemon juice and serve.
