RAITA

 

Ingredients:   

        Cucumber, 1 teaspoon salt, Natural yoghurt, ½ teaspoon white sugar, Pinch of ground cumin, Mint

 

What you do:

 

1.      Lay a clean tea towel on the work surface. Grate the cucumber directly onto the tea towel. Sprinkle half the salt onto the grated cucumber. Gather up the tea towel and squeeze the juice out of the cucumber.

2.    Put the yoghurt into a bowl and beat in the rest of the salt, along with the sugar and cumin. Stir in the grated cucumber.

3.    Add one level teaspoon of mint from the jar. Do not add any of the liquid. Stir well and taste. Add any extra seasoning or mint if necessary.

4.    Cover with cling film and put in the fridge to chill until needed.
