Shortbread

Ingredients: |
8oz Plain Flour |

2 oz Corn Flour |
|
|
2 oz Rice Flour |
|
|
4 oz butter |
|
|
2 oz margarine |
|
|
4oz Caster sugar |
What you do:
1.
Wash your hands.
2.
Sieve the flours
together into a bowl.
3.
Stir in the sugar.
4.
Cut the fats into the
flour mix until in small lumps.
5.
Dip your hands, palms
up, into the mix and lift some of the mixture on your fingers and at the same
time rubbing your thumbs across your finger tips. This lets you to coat the flour with the fat
and to make crumbs.
6.
When all the mixture is
like crumbs, carefully bring it together into a ball. Do not over squeeze as
the fat will melt and the shortbread will be tough and hard.
7.
Turn the ball onto a
floured surface and gently pat out to about ½ cm thick.
8.
Dip the cutter into the
flour and cut out rounds and place on the baking sheet, not too close together
as they will spread in the oven.
9.
Bake in the oven until
golden brown.
10.
Remove from the oven
and sprinkle with sugar while still hot. Allow to cool and then transfer onto
the cooling rack with a fish slice.

with the Cranachan!
